Beautiful Beans!

The Bold Bean Co's Organic Chickpeas were a revelation for many of my Tasting Box subscribers who got them in the recent Summer edition of the Box. Full of flavour, fibre, protein and nutrients, they are versatile and delicious.

We had a couple of skeptics when it came to the giant jar of Bold Bean Co Organic Chickpeas included in the recent Tasting Box - could chickpeas really vary that much between the cheap supermarket tins and this jar? The unanimous answer was YES!

Just like a juicy ripe tomato from the sunny climes of Southern Italy, these heirloom (ancient variety) of organic chickpeas is grown in the perfect climate to cultivate the perfect bean. They are then slowly cooked in batches for the very best flavour and to retain nutrients (rather than the intense heating the canning process uses). This results in the ultimate chickpea for you to eat straight from the jar or in your favourite recipes.

Coronation Chickpea Sandwich

The lovely team at Bold Bean Co have let me share this fantastic recipe for a Coronation Chickpea sandwich by Popham's Bakery that's made with their fabulous chickpeas. Just perfect for the upcoming Jubilee celebrations!


Coronation Chickpea Sandwich


Everyone loves a coronation chicken - very nostalgic, VERY BRITISH + more sustainable as you can sub the chicken for Queen Chickpeas. SORTED - just in time for the Jubilee weekend!


Serves 4 Cook time: 5 minutes


Ingredients

1 jar of Bold Bean Co Queen Chickpeas 

(or 660g of cooked beans)

5tbsp mayonnaise

2tsp mild curry powder, to taste

1/2tsp ground cinnamon

2tbsp mango chutney

2tbsp sultanas, or to taste

1 loaf of fresh, quality bread

½ head of crunchy iceberg lettuce

A handful of chopped coriander leaves (optional)


Directions

1.Mix together the mayo, curry powder, cinnamon, mango chutney and sultanas and season with black pepper.

2.Drain the chickpeas of their stock, but do not rinse (you want to keep the bean stock flavour!). Reserve the bean stock.

3.Add the chickpeas to the mayo mixture and stir to coat. Stir in 2 tbsp of bean stock to loosen if needed, then season.

4.Assemble: slice your bread and spoon the coronation chickpea filling onto one slice. Top with crunchy lettuce leaves and another slice of bread. Cut in halves and serve.
